Hey ! I was wondering if anyone knew a good banana and chocolate chip muffin recipe. My daughter is 3 and loves baking and I thought it would be a nice activity for the both of us. So any simple recipes are welcomed.

Banana Crumb Muffins

“A basic banana muffin is made extraordinary with a cinnamon-and-brown-sugar streusel topping.”

INGREDIENTS:

1-3/4 cups and 1 tablespoon all-purpose flour

1-1/4 teaspoons baking soda

1-1/4 teaspoons baking powder

1/2 teaspoon salt

3-1/2 bananas, mashed

3/4 cup and

2 tablespoons and 1 teaspoon white sugar

1-1/4 egg, lightly beaten

1/3 cup and 1 tablespoon butter, melted

1/3 cup and 1 tablespoon packed brown sugar

2 tablespoons and 1-1/4 teaspoons all-purpose flour

1/8 teaspoon ground cinnamon

1 tablespoon and 1/2 teaspoon butter

DIRECTIONS:

1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.

2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.

Chocolate Chip Banana Muffins

“These banana muffins are my kids’ favorite. I adapt it for adults by adding chopped nuts or dried apricots.”

INGREDIENTS:

1 3/4 cups all-purpose flour

3/4 cup sugar

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 egg

1/2 cup vegetable oil

1/2 cup plain yogurt

1 teaspoon vanilla extract

1 cup mashed ripe bananas

3/4 cup semisweet chocolate chips

DIRECTIONS:

In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, combine the egg, oil, yogurt and vanilla.

Stir into dry ingredients just until moistened. Fold in bananas and chocolate chips. Fill greased or paper-lined muffin cups two-thirds full.

Mocha Chocolate Chip Banana Muffins

“This recipe was shared with me by my friend, Sharon. She was given the recipe by her mother. Everyone who has tasted them will agree that they are the best muffins ever!”

INGREDIENTS:

1 cup margarine                    

1 1/4 cups white sugar                       

1 egg

3 ripe bananas                      

1 tablespoon instant coffee granules, dissolved in 1 tablespoon water

1 teaspoon vanilla extract

2 1/4 cups all-purpose flour

1/4 teaspoon salt

1 teaspoon baking powder

1 teaspoon baking soda

1 cup semisweet chocolate chips

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C).

2. Blend butter or margarine, sugar, egg, banana, dissolved coffee, and vanilla in food processor for 2 minutes. Add flour, salt, baking powder, and soda, and blend just until flour disappears. Add chocolate chips and mix in with wooden spoon. Spoon mixture into 15 to 18 paper-lined muffin cups.

I mean, you can’t seem to find any without the nuts. Being allergic to nuts makes it hard to have them. So, are their any boxed brands that have JUST BANANA muffins? Or are their any family recipes out there who are willing to share?

Banana Muffins

INGREDIENTS:

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

3 large bananas, mashed

3/4 cup white sugar

1 egg

1/3 cup butter, melted

DIRECTIONS:

Preheat oven to 350 degrees F (175 degrees C).

Coat muffin pans with non-stick spray, or use paper liners.

Sift together the flour, baking powder, baking soda and salt. Set aside.

In a large bowl, combine bananas, sugar, egg and melted butter.

Add flour mixture, and beat until smooth.

Scoop into muffin pans.

Bake in preheated oven.

Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes.

Muffins will spring back when lightly tapped.

 

Napoleon’s Banana Muffins

INGREDIENTS:

6 very ripe bananas, mashed

1/2 cup brown sugar

1/4 cup honey

1/4 cup spiced rum

1/4 cup cognac

3 cups all-purpose flour

1 teaspoon baking soda

2 teaspoons baking powder

1 teaspoon salt

1 1/2 cups white sugar

2/3 cup brown sugar

2 eggs, lightly beaten

10 tablespoons unsalted butter, melted

3 tablespoons butter

1 cup brown sugar

3 tablespoons all-purpose flour

2 teaspoons ground cinnamon

DIRECTIONS:

Preheat the oven to 375 degrees F (190 degrees C).

Grease two twelve-cup muffin tins. In a mixing bowl, mix bananas, 1/2 cup brown sugar, honey, rum, and cognac with an electric mixer until smooth.

In a large bowl, whisk together 3 cups flour, baking soda, baking powder, and salt.

In another bowl, cream white sugar, 2/3 cup brown sugar, eggs, and melted butter.

Pour banana mixture and creamed egg mixture into the flour, and stir until just combined.

Spoon mixture into muffin tins, filling cups 3/4 full.

In a small bowl, mix together 1 cup brown sugar, 3 tablespoons flour, and cinnamon.

Cut in 3 tablespoons butter until mixture resembles coarse crumbs.

Sprinkle over batter in muffin tins.

Bake muffins in preheated oven for 20 minutes, or until done.

Banana Muffins

This muffin recipe is an old favourite of mine.  Simple and tasty, it can also be used with many other types of fruit as a change from bananas.  Another popular alternative is to add chocolate chips to the mix with the fruit.  Around 100gm should be plenty to satisfy the chocoholics amongst us!

Ingredients:

2 cups flour

½ teaspoon salt

4 teaspoons banking powder

100gm butter

½ cup castor sugar

1 egg

1 cup milk

Banana – mashed

Sprinkle topping

1 tablespoon sugar

½ teaspoon cinnamon

Method:

  1. Cream butter and sugar.
  2. Add egg and milk.
  3. Add the bananas.
  4. Fold in the dry ingredients.  Do not overmix.
  5. Spoon mixture evenly into a deep 12 muffin pan or large 6 muffin pan.
  6. Combine the sugar and cinnamon and sprinkle over the muffins before baking.
  7. Bake for 12-15 minutes at 220ºC.
  8. Stand for 2 or 3 minutes and twist the muffins carefully to loosen before removing from the pan.
