I only have 2 over ripe bananas. The rest are still green so I can’t use them. Any good recipes calling for just two? Thanks.

I have a banana bread recipe that calls for 2-3 bananas.

2-3 bananas, mashed

1/2 cup oil

1/4 cup buttermilk(or regular milk with tsp. vinegar)

1 tsp. vanilla

2 eggs

1 3/4 cup flour

1 1/2 cup sugar

1 tsp. baking soda

1/2 tsp. salt

1 cup chopped nuts

Mix top 5 ingredients separately; and then stir bottom 5 ingredients separately and slowly mix into the top mixture.

Spray or grease pan.

Pour mixture into pan and bake at 350*F for around 1 hr.

Chocolate-Covered Bananas

5 bananas

8 popsicle sticks

3 cups good quality chocolate bar

3 tablespoons butter, cut up

Toppings: Chopped nuts Toasted coconut Cookie crumbles Colored sprinkles or chocolate jimmies Mini chocolate candies or mini semi sweet chips, for chocoholics

Granola Peel and cut the bananas in half crosswise, so that you have 8 pieces.

Place peeled bananas on sticks.

Line a cookie sheet with waxed paper.

Place bananas on the cookie sheet in the freezer, keep them in there as long as possible, at least 10 minutes.

Heat chocolate bits with butter in a double boiler over low heat until the chocolate melts and butter is incorporated.

Dip the chilled bananas in chocolate and roll with your favorite topping.

Chill or freeze until ready to serve.

These are so incredible, you won’t need ice cream this summer!

There’s also a recipe I love that is truly southern.

Here it is:

2 slices white bread Peanut butter (however much you prefer)

1 banana, sliced

Butter Spread the peanut butter on the inside of the bread.

Layer the bananas on top of the peanut butter on one slice of bread then top with the other. Butter the outside of your bread and grill this sandwich like you would a grilled cheese.

The peanut butter melts and it’s just wonderful!

If you want, you can substitute Nutella (a chocolate hazelnut spread found in the peanut butter aisle) instead of peanut butter for an even more decandent treat!

Hope this helps!

Bananas do not have seeds because they reproduce by planting the branch of a banana tree (not really a tree) in the ground as opposed to planting seeds. Eat bananas as a source of vitamin B6, vitamin C and potassium.

I know that there is a recipe where you mash boiled green banana then mold it in small cups with cheese in them and then you fry them, but I think I’m forgetting an ingredient. Can anyone help me? Or give me similar recipes? Green bananas can be cooked to make different dishes.

Hi.

I only know platano recipe. Cut banana on a bias. Put in hot oil to cook on both sides (length of time depends on how thick its cut). Remove platanos and smash with a heavy pan or whatever else you have. Return to fry for a very limited time. Removing and smashing them will allow them to get crispier. I use smashed fresh garlic, mayo, ketchup, salt to taste, and a small amount of mustard mixed together to use as a dip.

I mean, you can’t seem to find any without the nuts. Being allergic to nuts makes it hard to have them. So, are their any boxed brands that have JUST BANANA muffins? Or are their any family recipes out there who are willing to share?

Banana Muffins

INGREDIENTS:

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

3 large bananas, mashed

3/4 cup white sugar

1 egg

1/3 cup butter, melted

DIRECTIONS:

Preheat oven to 350 degrees F (175 degrees C).

Coat muffin pans with non-stick spray, or use paper liners.

Sift together the flour, baking powder, baking soda and salt. Set aside.

In a large bowl, combine bananas, sugar, egg and melted butter.

Add flour mixture, and beat until smooth.

Scoop into muffin pans.

Bake in preheated oven.

Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes.

Muffins will spring back when lightly tapped.
