Chocolate Banana Split

Ingredients:

cup sugar
3 tablespoons cocoa
teaspoon salt
2 tablespoons water
cup unsweetened condensed milk
2 tablespoons butter
teaspoon vanilla
4 bananas
4 scoops ice-cream

Method:

1. Put sugar, cocoa, salt and water in a small pan. Stir well.
2. Add milk. Stir over a medium heat until it comes to the boil.
3. Turn to a low heat and simmer gently for 5 minutes.
4. Cool for 10 minutes or more.
5. Peel, then split the bananas.
6. Put two halves in four sundae dishes.
7. Put a scoop ice-cream on top.
8. Pour the chocolate sauce over each and serve.

Banana Nut Loaf

Ingredients:

2 oz butter
cup sugar
cup bananas (mashed)
1 egg
1 cup flour
cup chopped nuts
2 tablespoons milk
teaspoon baking soda
Pinch of salt

Method:

1. Cream butter and sugar.
2. Beat in mashed bananas.
3. Dissolve soda in milk and stir in mixture.
4. Beat in egg.
5. Stir in walnuts.
6. Add flour and salt and stir into other ingredients.
7. Put the mixture into a greased loaf tin.
8. Bake for an hour in a moderate oven.

This one uses a small amount of canola oil instead – which is much better for your heart – and honey, which of course means lots of flavor. Don’t use regular whole-wheat flour. It is too heavy for this recipe. Look for whole-wheat pastry flour instead.

Ingredients:
3 very ripe bananas
1/2 cup honey
3 tbsp canola oil, plus a little more for oiling the loaf pan
1 tsp pure vanilla extract
1 1/2 cups whole-wheat pastry flour
1 1/2 tsp baking soda
1/4 tsp salt
3/4 cup chopped walnuts or pecans

Instructions:
1. Heat the oven to 350 degrees. Lightly oil a loaf pan.
2. Mash the bananas and mix with the honey, canola oil and vanilla extract.
3. Stir together the whole wheat pastry flour, baking soda and salt. Add the nuts.
4. Blend the two mixtures and spoon into a lightly oiled loaf pan. Bake for 40 minutes, or until center is set.

Eat a normal lunch and dinner, avoiding sweets.
Eat dinner before 8 pm.
Go to bed before midnight.
